I'm afraid I don't have any updates for you about the available currency options here, but this is something we've passed along to be looked into again.
As far as connecting your EA account to another Steam account, this should be possible if your EA account has not already had a different Steam account linked. Currently each EA account can only have one of each other platform linked over its lifetime.
These steps will let you check whether it's possible to un-link the account manually, though do keep in mind that unlinking an account can result in a loss of progress or other leveling issues in Apex, which is why it's typically recommended that you instead create a new account if you're looking to play using a different Steam account.
With that said, you're welcome to reach back out to support to check whether any other options are available to get the right Steam account linked. That's not something we're able to review or change on the forums, but you can reach support over at the EA Help website, or you can also speak with them over Twitter or Facebook instead if either of those options works better for you.
