Are you sure you're not hitting the shortcut to lock Windows while you're playing Apex Legends? If you hit the Windows key and L keys at the same time on your keyboard that will lock Windows.

That said, what happens if you try setting up a Clean Boot on your PC before you start up Apex Legends? If there's something else running at the same time that could be causing this to happen that may help. For more info on how to set one up check out the EA Help site.
