When Cast While Channeling Triggers Desecrate, it removes everything but Spectres that is summoned.

Taking a guess here, Spirit Offering isn't consuming the minions but giving the minions Chaos Resistance, this will cause their Chaos Resistance to probably reach 50% or higher which would cause them to die as your body armour will convert 2% of Life to Energy Shield per 1% Chaos Resistance.
