Lets stop at this statement upon which the rest of your ranty analogy is based:

You need to feel a bit deeper because what you are seeming is completely incorrect. You can and often do boil water for drinking in A21. Whatever source you found that said you don't is wrong.

Now, what you cannot do is take an empty jar to a water source and fill it up. THAT simple task is the one that is gone because empty jars are no longer represented as an item that can be held and used. But you can obtain murky water through scavenging and boil it into drinkable water on your fireplace provided you have a pot just like always. You can also stand in a water source with an empty hand and drink if needed. Finally,you will eventually get some dew collectors crafted where you can harvest drinkable water without needing to boil-- although, it is highly recommended in A21 to make all your drinking water into either goldenrod tea or red tea as you'll get much more hydration per unit. So even in this case where you have already drinkable water you can even boil that together with flowers to make tea.

Its not quite sky falling material and as you'll see when you get to play it, it is fun.
