The average yield of 54 plots would be as follows:
LotL Perk Level 0: 108 coffee + 27 seeds
LotL Perk Level 1: 216 coffee + 27 seeds
LotL Perk Level 2: 216 coffee + 27 seeds + 27 coffee
LotL Perk Level 3: 324 coffee + 27 seeds + 27 coffee

The maximum yield of 54 plots would be as follows:
LotL Perk Level 0: 108 coffee + 54 seeds
LotL Perk Level 1: 216 coffee + 54 seeds
LotL Perk Level 2: 216 coffee + 54 seeds + 54 coffee
LotL Perk Level 3: 324 coffee + 54 seeds + 54 coffee

It takes 270 total coffee to create 54 seeds.
As can be seen the minimum yield without even a single returned seed or bonus harvest is more than enough to have created seeds for replanting and still had 54 coffee at LotL Perk Level 3 (324-270=54).

You said you got 21 seeds and made 33 more (at a cost of 165 coffee beans) and were then left with 26 beans. Based on your statement your harvest was 191 coffee + 21 seeds. Thus I think not all your plants were fully grown at the time of harvest (any immature plants would have returned only seed).
