[2022] M60 wont take 7.62mm?

Hold R to open the ammo type wheel; Sounds like you have HP or AP ammo in your inventory and haven't selected it to use. Or possibly the inverse, you previously selected either AP or HP and now are trying to use normal ammo. It doesn't auto-switch; Only uses the ammo type you choose.

Well, it turns out the M60, despite it actually using 7.62mm in RL and in game, saying in its description that it uses 7.62mm, I found some 5.56 and it loaded that up just fine. Soooo, either a bug, or a missed description...

Ah... You're using mods. :) There isn't a 5.56 ammo in the vanilla game, and in the vanilla game, The M60 uses 7.62.
