Basically every single survival game starts out hard and gradually gets easier, though...

Minecraft? Rough start, Gets generally easier the more you play- More stockpiled resources, better gear, enchantments, buff potions, etc.

Subnautica? You start out with nothing, but eventually have an oxygen tank, oxygen pipleines to difficult places, a mini sub, a macro sub....
Valheim, You start out with nothing but eventually have incredible weapons and most places you go are no challenge..
The Long Dark, You start out with nothing, but with careful play before long you'll have tidy stockpiles of materials, food, and water.
Project Zomboid, Start out with nothing, but as you play you gain more skills, better defensive clothing and offensive weapons, and by a few months in you've got a fully stocked base and nothings really a danger to you.
Astroneer, Start with nothing, before long you'll have a base on every planet, a rover on every planet, plenty of resources...

Like, Literally the whole MO of survival games is "Start with nothing and build yourself up to the point that you don't have to worry about anything."

A rare few happily just pound your face into the sand endlessly, But they are exceptions- Not the rule.
