Should be able to, yes. When you finish, Make a backup outside the game folder just to be sure.

Uhm.. I'm afraid I don't know exactly.
Likely it's either in
"C:\Users\\AppData\Roaming\7DaysToDie"; aka search %appdata% in windows.
Or in the game folder, ".../7 Days to Die/Data" somewhere.
