[2020] My Asset Editor does not allow any Editing of Assets--what gives?

Are you using mods? Because there should be a Properties window in the bottom right corner. Lots of mods break the editors though, as they were designed for the simulation and not the editors. Try loading your game with the launch option -disableMods and see if that helps.
