I've replaced Valhalla with a modded map to try, but it results in MCC crashing as soon as I load up Halo 3 Custom Games. Replacing it back with the vanilla map doesn't fix it at all.

Can you try verifying the integrity of your files after restoring the unmodded variant and see if that works?
If not, be sure to send your info along to Halo Support so they can take note of it and see if they have any other alternatives.
