So I have read that I am not the only one with this problem apparently. There is a bug where you are unable to play anything at all in infinite after the latest patch. Already deleted the game and redownloaded it again. Also checked for any console updates that I have missed, but nothing was there.

I am part of Halo insiders. Joined the 18th of april 2019. I am not sure where I can find information about the ring you're talking about? If you can tell me where to look? And is this linked by any chance with the problem that I am not able to start any game on infinite? Thanks!
It's certainly possible.
To find your ring info on console, you can go to:
My games & apps > Xbox Insider Hub > Previews > Joined > Xbox Update Preview > Manage > Should tell you what ring you're in!
If I had to guess, I'm going to guess that you're in Xbox Update Preview Alpha Skip-Ahead.
Can you submit a ticket with Halo Support and let them know that you're experiencing this issue, that you're part of the Preview Program, and specifically identify what ring you're in?
