[2021] Who is actually fun to play against?

I saw one of the higher upvoted posts here saying “I hope Akshan will be fun to play against” and talking about how they hope they considered whether Akshan is fun to play as and play against, but that got me thinking, who is actually fun to play against? I always see people complaining about champs/reworks being unfun to play against but I never see praise the other way around. It kinda feels like a pipe dream to hope new champion designs are ever fun to play against, going back all the way to the early days of League, from release Xin/LB/Kass to reworked Akali/Yone/Irelia to cite recent, prominent examples.

For me personally, I find Xerath mid very fun to play against. I main immobile champs so constantly predicting and faking out his abilities and constantly having to keep on my toes is pretty fun.
