I would personally choose Ezreal. His story would give the most info on the world of Runeterra since he is an adventurer/explorer. I feel like many other characters would offer great stories as well, Such as, Jax, Fiora, Swain/Draven/Darius and Leblanc, Garen/Lux. But i feel as though Ezreal's story would offer the most in terms of lore and information about Runeterra and its monsters.
