[2024] Workbench stopped making planks, says I have planks, I don't

Nothing you are doing wrong. It's a bug. I've got a patch coming today for this. Sorry about that!

I've uploaded 1.0.21.0 on Win and Linux (building OSX now) to fix this. Let me know if you continue to get an issue with those inventory counts.
