Butchering a venerated animal is a terrible idea. Your colonists will be miserable, much like butchering humans, and won't want any of its resources.
You do have a couple of options that won't drive your pawns mad:
-Build a sarcophagus (especially a high-quality one with precious resources, such as jade or gold), and set some meditation spots around it. Pawns will meditate at it, or admire the art.
- Keep him in your freezer (make sure to forbid it, and remove bears from your butchering bill, or place it in a sarcophagus in the freezer to keep it safe). Eventually get a resurrector serum to use on him and accept him into your home.
-Resurrect him with dev mode and pretend nothing bad happened
