If I understand correctly, the new Xbox consoles still treat this like a 4K 120 signal coming in - while the gameplay might not be full 4K, the Xbox UI, etc. will be -- which is why HDMI 2.1 is needed. This is a platform-level requirement, so I think other titles on Xbox Series S|X that offer 120 fps will require HDMI 2.1 to access the same kind of performance as well.

I would definitely try it before you invest in a new display or cable. Talking to our graphics engineer, it sounds like you can do 120 fps at 1080p if you're on a 1440p display with HDMI 2.0.
Regardless of what happens, shoot me a DM once you have your Series X and let me know if 120 fps works!
