I bought Ultimate Edition via EPIC store.There are only two languages showed in language dorp-down list, English and Traditional Chinese. Where are the other languages?

Not all languages are included in each version of the game, so it may be that these are the only languages available for you game version.
If you uninstall the game, and then install it through the Uplay client instead, then it can contain additional languages.
