Since the update, every time I exit a menu my horizontal sensitivity just randomly maxes out for about a minute.

We're aware of this bug and are currently working on a fix. Thank you for reporting regardless, stay tuned for updates.
The current workaround right now to fix is to look on a different axis (ie. vertical in this case) which will then reset the sensitivity for your horizontal axis.
