Please allow us to disable EOS like in previous versions.

The problem is that dedicated servers are trying to connect to EOS and if the servers are down I can't connect to a server I'm playing on that doesn't even have EAC turned on because of an overhaul mod. None of us playing on the server are using Epic to play, we all have 7DTD on Steam. So why can't I play on the server in the 2 short hours I have today before I have to head to work? Because the game isn't connecting to EOS......

EAC and EoS are not the same thing. They are completely separate.

EAC is the anticheat software.
EoS is "Epic Online Services", which is used to accommodate cross-platform play outside of Steam, and is utilized for the server listings.

The platform.cfg file was only ever a temporary tool for troubleshooting, and is not used anymore in the public build.

Your issue with being unable to connect to EoS, or the server being unable to, is a networking problem.
