Firewall blocking 7DTD in A20 will cause the failure of menu to load as you are blocking the ability to talk to Epic thus the connection to EOS fails. You could press F1 and see the logs for yourself.
You can try this suggestion, or just set steam into offline mode, or allow 7DTD to access Epic.

Edit platform.cfg to change crossplatform=EOS to crossplatform=

Be aware though that this will change your base character file on your saves and any servers you played on before changing this setting.

It will most likely also prevent you from participating in any further cross-platform multiplayer activities, like when they release the next console version.

And you aren't forced to "run through EOS", it's just a new protocol to support future cross-platform play. Could be with Epic, could be with other things.

And in case you weren't already aware, Epic is who owns EAC. So you've been using their service for years already.
