That seems playable to me.

Many people make the mistake of thinking less experience points = harder and more experience points = easier. In reality, you’re controlling the speed of (potential) progress. The zombies scale up based on how much experience you accumulate, so more experience = harder zombies.

“No traders” isn’t something you can set in the settings. If you simply choose to never visit a trader, you miss out on the 4 skill points you earn for completing the starting quest. That makes it one of the more significant restrictions you’re imposing on yourself, in my opinion. You won’t be able to do any other quests either, but you can still loot a building without doing a quest of course.

No quests means no re-spawning loot in points of interest. However, 8K is large enough to not run out of places to explore before you get bored in my opinion, at least for a single player.

One small correction- you actually get the skill points for completing the last step of the tutorial questline, placing the campfire. You don't need to visit the trader, can simply abandon the quest at that point- All you lose out on is 100 exp and knowledge of the traders location.

OK, but the OP wasn’t talking about performance at all. Out of respect for what they wanted to discuss here, please don’t hijack their thread. The topic of this thread - and yes, I’m saying this formally as moderator - is gameplay settings that may make the game unplayable long-term.
