One thing I noticed in the DxDiag was the video drivers appear to be out of date. Did you roll back to previous drivers when you were trying to troubleshoot the BSODs?

Have you been keeping an eye on your hardware temperatures and power usage while Apex Legends is running? Have you noticed anything out of the ordinary there leading up to the crashes?
Have you had the chance to try running the Windows System File Checker tool to see if if is able to find any problems?

Have you checked to see if there might be an update available for your BIOS? I have seen some cases where that can help with similar crashes.
