Some things are unfinished compared to Java like no fog for the Darkness effect + Shriekers only work with a redstone signal or stepping instead of Sculk Sensor vibrations

Most of my life I've worked on games or mods that are never "done". Minecraft will be alive for decades to come. I've never quite had the experience of completing a game outside of hobby projects. I've always been curious what that experience is like.
Followers in the game industry: if you've done both, how does it compare to work on one new game from beginning to the end (shipping) versus working on a game under the GaaS umbrella. Does the former even exist much these days? How does it compare?
Definitely curious on the impacts such models make on a team. Is it more rewarding to complete a single project (game) in a limited time or more rewarding to keep iterating on the same game and perfecting it slowly over time for many years?
