It's a colony building and management game called Odd Realm. You can play it on steam or itch.

I use a combination of OBS and ffmpeg. I record about 10 minutes of footage in OBS. Then, using ffmpeg, I crop, remove audio, and sample every 10th frame. The spits out the final timelapse video. The great thing is these are all free tools and the process is quick.
