[2019] What's the point in creating a load out?

I'm level 345. I keep finding gear which is better and find myself constantly seeking the highest number regardless of other stats.

What's the point in creating a load out if it's going to be replaced with something better in 5 minutes?

I'd like to find a kind of gear with the perks I like, keep that ans upgrade over time.

Is there a way to do that? Same thing with guns.
