I have had this issue for the past two days and all of the suggested fixes seem to be for pc only.

I am unsure as to why this is happening as I played the game for a week with no problem beforehand.

Do I have to restart my switch? Do I have to connect to a new network? I have already done those things and I still have this problem. I am completely confused as to how to fix this very irksome issue.

I am playing with my mobile Hotspot but I doubt that is the cause of issue.

It sounds like you may have an issue with Port Forwarding on the Switch? Try this troubleshooting guide that might help:
