I've done a few of the Co-Op grinds to chew through too many ships and I MUCH prefer the new system which is just playing the game <3.

You should be able to either see how many ships are remaining in your "Rewards" tab in Port (if you have over 100 ships).
You can also select the "Show ships with Festive Rewards" option in Port:
