[2023] why is my food and water level instantly sincking after I ate 5 steak for example ?

The numbers on the left are you 'digesting' your food/water; Your actual hunger/thirst bars are at the bottom below the hotbar- The green and blue bar being hunger and thirst respectively. You can also view the actual value in the character menu stats screen.
