The hitbox of the plants doesn't directly match the ability to see the prompt for the next one over. IT's a bit finicky, I'll give you that.
Unfortunately, Living off the Land functions by using the block upgrade/downgrade/harvest system; It's as if you're chopping a block of wood- It goes from Wood Block->Wood Frame when you chop it, and then from Wood Frame->Gone when chopping it more. For chopping the block you harvest back wood.
The plant grows basically the same way Wet Concrete dries; It has a timer that it abides by, and when it finishes, bam, it becomes a grown plant that you can 'downgrade' by hitting it to get the crop's yield.
For plants it's Plant->Plant Seed->Gone; And when you hit it, you get the Crop's return; when you hit it as a seed you get a seed.
The Living off the Land bonus yield works like Salvage Operations or Motherlode- You get back more because it's amplifying the drops. But, this doesn't work with E to harvest; Because E to harvest functions off the interaction system, not the block upgrade/downgrade/harvest system. A secondary issue is that E to harvest is not compatible with leaving the seed planted- You're picking up the grown crop as if it were a wood frame; Meaning you'll have to replant every single time you harvest.
There's certainly a mod to get E to harvest, if you really want it; Just be aware that you won't get back multiplied yields from living off the land, and that you'll have to replant your entire field every harvest, instead of just the one or two that you mistakenly punch the seed of.
