Yeah, you get a notification and the quest shows in the upper right of the UI display. It tells you what you need to gather, and additionally the items are highlighted on the ground.

It is pretty hard to miss, and has been made that way intentionally.

you have you fought a zombie before? You ARE human and your first instinct would be to run and hide. I know movies like to make us out as brave and reckless but faced with something like that nobody would choose to go toe -to -toe with a zombie.
This game has never let you start out punching zombies so I'm not sure where you are getting this. Craft a club and learn how THE GAME works not how you think it should work. Are you new to gaming?
Trying to think of almost literally any game, survival or not, that lets you start out and barehanded brawl the primary enemy type out the starting door and win easily...and I'm coming up blank. Even Minecraft heavily incentivizes you to get a weapon before you encounter enemies, you CAN punch enemies to death (and you can in 7DTD too), but doing so takes a lot of effort and is much more dangerous than having a weapon.

Rust, Maybe? But bashing people over the head with a rock 99% of the time requires the other person to also be wielding a rock or you lose- Effectively the same situation, You need a weapon before you engage.
