Tbh, the most common answers you're going to get are likely going to be "Current/A19", "A16" and "A12".
Personally, A19; The current one. If you're new to the game, Just get started with the current- Don't worry about the old.
As for why, Jimmy pretty well summed it up. It's more cohesive, Presented better, designed better, less bugs, better optimized (yes; It's technically better optimized overall for it's visual fidelity. Even if it runs a little worse than it used to, They've dramatically boosted the graphical fidelity and that came with some weight on performance that they're still polishing.. And that it still runs about the same is nothing short of incredible. At least imo.)
Zombies are smarter- Which is a mixed bag, some like it, some don't. I do; I don't miss zombies running in circles for no reason. Though the current has a couple oddities of it's own.
The combat feels better, Weapon handling in general feels better, the POI's feel better...just, overall, top to bottom, I like most things. There are a few things I'm not fond of- But, they're small enough that I don't mind it in light of all the changes I did enjoy.
