Hello it seems when I am asked to take a photo in relation to a quest the mouse option for taking the photo often does not work. Is there perhaps a hotkey or something as an alternative way to snap the shot? I am currently stuck with the queen wanting her photo at her tower.

I'm sorry to hear that you're having some trouble taking photos for quests.
If you have the target properly in the center, black arrows should appear, and then you should be able to take your picture. If that's not working at all for you, can you tell me a bit more about what happens when you try to take the photo? A picture or short video clip would also be helpful to help me take a closer look into this.
