Being unable to save your game for so long is unusual, and I don't have a guaranteed workaround I'm afraid; reports of this are very rare.

As it has now been a week and you've no doubt quit the application, can you please confirm if the issue persists?

If so, my first recommendation would be to disable any installed mods and see if there are any improvements.
