[2021] Is there a way to go back to previous game version?

With each patch I'm really afraid that the game becomes unplayable with stutters like it did before with a certain patch and I couldn't play for months, or how mods get broken.

I have already tried to copy paste my entire game folder to a backup location, then install patch, then copy the previous game folder back to original location, but when I do this the game simply won't even start anymore.

Are there any other ways or alternatives to go back to previous version?

I am afraid it is not possible to go back to older versions, in order to ensure that your game runs correctly you do need to keep it up to date.

Staying in offline mode would prevent this possibly however I do believe Ubisoft Connect requires you to go online every now and then.
