A good size pagefile is probably the solution here. I recommend setting it to 32GB and ofc make sure you have that much free space on the disk it's on.
RAM usage going up isn't surprising. With 8GB your game would be relying on the pagefile to load, so now that you have more available RAM, it's taken some load off the pagefile and is using RAM instead.
But we can also take a look to see what's happening with your game and confirm if it's even memory related at all. :) We'll need the output log (called player.log on Mac and Linux) for that. This guide explains where to find it, and recommends some sites to upload it to, since we can't attach files here on Steam.
