This is the last ever driver for that video card spo you may as well apply it:
NVIDIA DRIVERS GeForce Game Ready Driver WHQL
Then I think we should do a clean reinstall, and get rid of all those mod errors:

- move any valued save games elsewhere
- "uninstall" in Steam-CK3
- unsubscribe fro ALL mods in the Steam Workshop for this game
- manually delete both the Steam/SteamApps/common/CK3 AND Documents/Paradox Interactive/CK3 folders
- re-install game in Steam, run a Steam Verify when done.
- add CK3.exe to the exceptions list of your antivirus app; ESPECIALLY if you have Windows Defender, add it to the Ransomware "Apps Allowed Through" list.
- start the game with no mods active and test

In particular make sure there are no files or folders left under either the Steam CK3 or Documents CK3 locations, before installing again.

Still a video/GPU issue, it seems looking at that error log.

In file explorer right click on ck3.exe , properties, compatibility. Untick anything in ther ethat is ticked, then tick "disable fullScreen optimisation", apply and exit. Then run ck3.exe directly from there.

If that's no better let's try a clean reinstall of the nVidia driver:

- uninstall it, and all other nVidia software
- reboot
- install that new driver again
- reboot again

Your NVIDIA GeForce GTX 560 Ti is somewhat above the minimum requirement for the game (although well below the recommended!) so I wouldn't have though it was a lack of video power as such. It is possible that card is okay but the fact nVidia have not updated the driver for 3 years might play into this situation though.
