So, I asked about it. Things should fall if they're free, BUT supposedly if you carve a large enough piece, the middle should be holding it up since the algorithm will conclude that since it hasn't been manipulated it's still "grounded", and based on that, things connected to the middle will still count as being grounded.
The theory is that if you swiss cheese it, the algorithm is forced to check the middle areas and at some point, it should collapse.
TLDR: The algorithm doesn't bother checking for collapse on large pieces that through normal gameplay wouldn't need checking.
