I'll let you know guys know any information about the release date as soon as I'm able to. I wish I could do more, but I'm not personally working on the android port, nor am I publishing it.
Just those 1000 Kegs? No. There is way more that hasn't even been mentioned that contributes to the size of his save file. The quote was just the few things that he mentioned in his OP.
Regardless, the fact of the matter and the biggest problem, is that he is even limited in the first place. If I was him with this knowledge that he has posted about the limitations of the Switch port, I would go and contact u/ConcernedApe and let him know of this issue so that he can let the devs of the Switch port know about it, and they can fix it. Because if it's affected him, it's likely to affect others.

Don't be too hard on yourself. Before I got my degree I was also a hobbyist and not particularly good at finishing stuff, and worried about all the job offers asking for a portfolio. But look, CA is looking for 3 years of game dev experience, which is much less than what it took him to get Stardew Valley done. This is not a case of "being better": you're only programming in your spare time, of course you're going to jump between ideas and projects! Frankly, the offer seems to target a very small core of experienced programmers in the games industry.
Heck, I'm a programmer in said industry now, I'm pretty confident with C# and my abilities but I can't claim 3+ years of game dev so I won't apply - even though it'd be the dream!
Hey, if you feel confident in your abilities, but don't have 3+ years, I encourage you to apply anyway. Ultimately, I just want to find people who are right for the job.
In the new update I'm working on, I'm going to make some improvements to this... I'll probably make it so that you can place a building on top of most things that you can walk over/through (e.g. hoed dirt, wild tree seeds), except crops
