Using Vortex is your issue. The way it deploys mods ♥♥♥♥♥ up the folders.
You can try looking in your log for the details. Once you find the folders, back everything up. Then you will need to fully delete both the 7DaysToDie folder in Appdata, and the game client folder. Then re-install the client and restore your backed up save folders to the correct location.
Install mods manually. Don't use crappy software that isn't designed for the game.
