I can't find chinese language option after the last update.

For troubleshooting purposes, can I check if you've tried verifying your game files and reinstalling your Ubisoft Connect client? If you haven't, give these steps a go and see if issue persists.

It would certainly be worth a try!
Please be sure to backup any save data before reinstalling though, they can be found in %userprofile%\Documents\Anno 1800\accounts
The first window prompt when reinstalling the game should ask you for the language so make sure this is also set to Chinese and it should download / run the game in Chinese as default.
