Do you lose the cosmetics if you unlink the ps4 from the epic account ? Ex. PS4 exclusives
No, the cosmetics are on the Epic account, not the PS4 account. You will lose access to them from the Playstation that is disconnected though.

NOTE: Once you've linked your Xbox Account to your Epic Games account you will not be able to link a different Xbox account to it.
In order to unlink you have to check 4 boxes, one of which states:
I will not be able to link my Epic Games Account to another Xbox Account
How 'bout you learn the systems of the company that you work at?
You can do it but it is restricted and has a cooldown period. If you have issues trying to connect a new Xbox account you can reach out to player support and they'll be able to assist with the new connection so long as you aren't in the cool-down period.
