I’m on Xbox, and the achievements are console own. I know Ubisoft doesn’t really have control over Xbox achievements but maybe someone had the same issue and just uninstalled and reinstalled.
On Xbox you can see the completion percentage for each achievement. One day all the percentages all froze. So for example “asset protection” destroy 20 gadgets in quick match/ Ranked, mine was at 75% completed last week. After probably 50 more gadgets destroyed it still hasn’t moved/updated.

The only things that we could advise to do would be to redo the steps required and to also try
these troubleshooting steps to ensure the best connectivity possible.
Beyond this we would suggest contacting Xbox support as we cannot control their achievements unfortunately
