[2021] Need of 2.8 and its updates to Stellaris.

Why can you not run 2.8.1 , I'm sorry?  

I suspect you are looking at the list of old versions in the Steam Betas tab, is that right?

But 2.8.1 is not a beta, it is the current public release. Opt out of all betas and Steam will install it automatically.

Are you now on 2.8.1 in the main game menu, or not ?
