You should, we're probably the biggest player-base and it is kinda unfair that EU starts so late, I'd take a 8 AM launch over a 8 PM one...especially since it happens in the weekend
We can't do 8am in Europe because that's 8pm in NZ and our staff need to be around to handle the logistics of the launch.

You can defer more than one item.

Yes, you'll encounter pre-grown gardens that have ready to go pairs of crops you can select between.

Yes, the Ritual rewards reset every instance so you'll lose it if you don't defer it.

The idea is that you can defer the reward until you can afford it.
Can GGG clarify--is it possible that an item in the Ritual buy menu is too expensive to purchase because you didn't get enough favor from the battles? Or will it only display items you could actually purchase?
This system seems like a really convenient way to remove Perandus honestly, given that it now sounds like Perandus is a bad Ritual with extra steps.
Yes, it's possible. In that scenario you can pay some Tribue to defer the item to the next area where it will become cheaper. You can do this until you can afford the item, spanning across several areas.
So do the atlas skills affect all zones or just the zone to which the tree is tied?
It's on a per region basis.
The rewards are the same throughout the instance. At your last Ritual in an area, you'll have the most tribute so you could simply wait until that one to review the rewards if you prefer.
Is there a way to store the crafts? Or are they just "use em or lose em?"
You can store up to 10 crafts in your Horticrafting Station which can also be placed in your Hideout.
Drops should be working but it does take some time to process every drop.
