I think Targon and the Shadow Isles are better fit thematically for the end game region than Freljord, but yeah, kinda sad they haven't released an adventure in Freljord.
I think frejord would be an excellent fit for a 5-star adventure.

No champions currently have a 3rd fight. It's been there since the start of path and AFAIK there haven't been any announcements about them
I’ve talked about it a few times, basically players showed a lot more interest in new champions, world adventures, and stuff like the weekly adventures than in slowing down champion releases to make specialized narrative adventures for all of them. A narrative adventure can easily take 2 weeks to set up involving multiple devs. That’s about as long as a whole champion takes to design and implement.
Making 3 per champion would have resulted in releasing only 1/4th as many champions over the last year, and since most players only played the narrative adventures once or twice total we felt it made more sense to focus on adventures you could play with lots of different champions or champions you could use on lots of different adventures.
It could absolutely be revisited in the future, it’s just not the current priority based on what players seem to be most excited about.

Path of Champions got rebooted into POC 2.0, with reworked deck compositions and powers for each champion. So direct ports over wouldn't work, they needed to do some rework for the old champions to put them back in. Since they usually like to add champions from the new set, some of the old ones still haven't been added, including Ahri.
