Anyone know how to fix this? My monitor resolution is 1080 and so is the game's. When I select fullscreen it works fine, but when I go to borderless window mode, it shows just the top left quarter of the screen. As if it's going into a 4k Resolution whenever I go borderless fullscreen. origins and odeyssey don't do this. Idk how to fix it.

Could you try just moving the settings file to somewhere else on your computer, then try launching the game again. It should create a new settings file with the default settings when you launch the game again, so just to see if having a new default settings resolves it. The location for it is:
C:\Users\\Documents\Assassin's Creed Valhalla\ACValhalla.ini
If not, you can then just copy your settings file back to where you took it from and replace the new one again.
