I've also just done the same issue this moring and saved over 400+ hours of a character in AssassinsCreed Valhalla. Is there anything I can do?

I'm so sorry to hear that this happened. 
We aren't able to restore your saves but you may still be able to find one that you can use.
If you deleted a manual save, the game also automatically saves after key moments during the story or when taking certain actions like fast traveling. I'd check if you have either a previous manual save or an auto-save that you can access. Auto-saves are separate from manual save games so you may have some luck there.
You can also check if there are any cloud saves available. Here are the steps to upload a cloud save but it should help you find the cloud save to download it as well.
If you have PlayStation Plus, it's possible that your saves were auto-uploaded to the online storage as well. This guide from PlayStation support will help you to access that.
