Hi, a week ago I got my final piece of the St George Armour set, the chest piece but on heading back to my ship I got the fly up in the air and die bug which obviously cost me a progress made in that raid. Now even though I've completed every raid on every spot in every river multiple times it just won't spawn.

I'm sorry to hear that you lost your St George chest piece after an unfortunate flight. We have an ongoing Megathread for Eivor's sudden flights, which you can check out here. I'd recommend giving the thread a follow for additional news and updates regarding this issue.
@azullFR makes a great suggestion! After completing three additional River Raids, the camps along the River Dee should reset fully and be raidable again. I'd recommend checking out military camps specifically to see if you can locate the chest piece.
If you've been able to raid all of the military bases along the River Dee and you still haven't been able to find the chest piece, please can you send us a video which shows the following:
