I have tried to play AC valhalla again after a while. Now if I launch the game from Uplay, it gets stuck on the Ubisoft Connect window. (I have waited like 30min and its still "loading"). If I run the game as administrator from the folder, I can get into the game. However it crashes everytime after 5ish sec. after I "Press any Button to continue".

I have tried everything like update Windows, update driver, verify gamefiles and even re-installed the game. All to no use. Is there anything else I can try?

Looks like you have tried to perform the plenty of steps in order to solve the issue. Have you also tried to reinstall Ubisoft Connect and perform the Clean Boot?
