For survivors? Speed is the same, but some survivors seem to be a bit louder than others (screams, etc.). Otherwise, it's looks mainly that is different and height.
For killers, it's a different story, as they're all individually unique.
You can put your feedback on here or the official forum, but most presence is on the official forum as it's more time consuming to switch back and forth - many people do in fact double post their feedback on here and on the official forum.

As of right now, it's not possible to add other platforms but those mentioned before. Only Stadia and Steam are possible right now and Switch will be added soon.
When the PTB is available, go to DbD in your Steam Library, right click, go to properties, then to Beta's and use the scroll down box on select the PTB. There's no access code, so it will automatically download.

I used to play with Empathy, but I don't use it for the whole "avoid the killer thing" which is what many people associate with the perk. I like to run Sabo builds and make saves so it's great for knowing when someone is a the point of a chase where they're going to go down, you can usually tell from watching the survivor in a chase - that way I can get into a good position.
On thing I like about it, I can see which pallets have been dropped :) (at least from the point the survivor got injured).
